Our History

Winegrowers for 2000 years

Georges Rasse, winemaker at Domaine des Hautes Collines

Twenty centuries ago, the Romans, by establishing an oppidum on this hill to watch over the valley, planted the first vines and the first olive trees.

A little corner of Tuscany at the foot of the Baou de Saint-Jeannet, sheltered from the north and wonderfully exposed to the south, these hillsides have continuously produced grapes. The ruins of a Roman-era wine press bear witness to this. It is, in fact, the name of one of our wines.

In more recent history, the old people of Nice still remember those beautiful bunches of late Saint-Jeannet grapes that my father used to deliver at Christmas to the grand hotels by the sea.

From father to son

When the grapes in bunches were no longer sold, they supplied juice to the first grape-growing stations.

Then in 1948, My father embarked on this wonderful wine adventure. On the advice of friends from Bordeaux, he planted Merlot, Mourvèdre, Syrah, Grenache, Cabernet Sauvignon and Gamay too, for freshness.

In 1986, I took over from my father and over the years, for more than 30 years, I have been blending grape varieties to create finer, more elegant and more distinctive vintages.

Winemaker, Domaine des Hautes Collines

Today, his son Mathias continues this adventure alongside him. Together, they continue to refine the estate's vintages and welcome visitors with the same passion, that of a unique terroir passed down from generation to generation.

Our Expertise

From 3 months to 3 years of sunshine

Wine jars aging in the sun at Domaine des Hautes Collines

I continued the tradition of aging in the sun, which allows for oxidation to be worked on.

In 20 years of research, I have transformed this empirical approach, neglected by everyone else, into a true method. It is a complex know-how that allows me to refine my vintages, according to my palate and my intuition, giving them... completely unique aromas of spices and nuts.

The rosé wine takes on the color of the tiles, the reds become amber, taking on the nuances of the aromas of a mature wine. , Candied sour cherries, kirsch, prunes , while retaining the exceptional freshness of a young wine.
